This Okinawan style of dashi soup base is different from typical mentsuyu or white dashi soup bases. The main ingredients of this soup base are pork and bonito flakes, providing it with a rich flavor.
Pork bones have been slowly simmered down into a concentrated stock, and bonito flakes have been added into this soup base concentrate to create a robust, umami flavor.
This soup base can of course be used to replicate traditional Okinawan soba, but it can also be added into other dishes such as fried rice, grilled meats, and other noodle dishes.
