Adachi have taken two quality miso products - a mellow koji miso, and a two-year-aged hatcho miso, and blended them together - smoothing out the strong soybean flavor of hatcho miso with the mild rice koji. At this point, they're placed in tubs and naturally fermented for ten months - five times longer than most miso pastes - which gives it a unique, well-rounded flavor.
Adachi only uses select, domestic ingredients, with traditional methods, and using as few additives as possible to make their natural miso pastes, so you can be sure you're getting the best of the best in every bite.
