Inaniwa is one of the few udon companies remaining that insists on doing everything by hand.

Using 100% domestic Japanese wheat flour, and their own special recipe, they create a high-hydration dough that is mixed and kneaded by hand, before being hand-stretched into udon noodles following traditional methods.

Their intensive process, carried out by experienced noodle masters, takes four days to create just a single batch of udon noodles. The dough alone is left to hydrate and rest for a period of 43 hours. The result is delicious, perfectly spongy udon noodles with the rich flavor of wheat, brought out through the maturation process.

Not only do they make udon noodles, but they also make snacks, and other items using their special, handmade udon dough as a base.

Inaniwa's craftsmen employ the traditional methods of handmaking udon, passed down since the Edo period. Every step of the process, from mixing, to kneading, to stretching, is done by hand.
