This shoyu is called Maru Daizu Usukuchi Shoyu or Whole Soybean light soy sauce made by Daitoku Shoyu. Usukuchi shoyu is a shoyu famous in the Kansai region in Japan. It is lighter in color and saltier than the more commonly known Koikuchi shoyu.
In this usukuchi shoyu, Daitoku uses whole soybeans that have been locally cultivated in Western Japan, which are 100% rare soybeans, in which less than 3% of all shoyu produced in Japan contains! You can be rest assured that the soybeans in this usukuchi shoyu are free of harvest contamination and genetic modification.
This special shoyu also differs from other usukuchi shoyu in that it has been tailored to fit Japanese, Chinese, and even Western cuisines! It uses high-quality salt and sea water from Nagasaki, which gives it a unique taste, allowing it to fit the flavor palette of multiple cuisines.
No chemical seasonings or preservatives have been added to this shoyu, and it has been naturally aged to ensure the best-quality flavor.
Try adding this usukuchi shoyu into soups, stews, or dishes in which you don't want to alter the color too much.
