Hita Shoyu, located in Ōita Prefecture, is originally a koji-ya (maltster) established in Edo period since 1843 which specializes in producing soy sauce, miso paste and, amazake (sweet fermented rice drink). This miso paste is the No.1 standard of excellence as Hita Shoyu says.
This is a barley miso paste produced using a rice and barley mixture ratio of 8 to 2. The proportion of rice is greater than conventional mixed miso pastes resulting in a more creamy and milder taste.
A 100% Japanese miso that all ingredients, namely rice, barley, soybean, and salt are all produced in Japan with careful selection.
