The Kakukyu Organic Hatcho Miso is a traditional miso paste that is originated in Aichi Prefecture. It is a type of mame-miso (bean miso paste) and the paste has a dark brownish-red hue.
Hatcho miso is a naturally-fermented soy paste that is made from soybean and salt only. These ingredients are filled in a wooden barrel, and the local’s natural stones are placed on top of the barrel as a weight, and to maintain the fermentation process for two years or more. With these processes, this miso paste features intense umami with a slight punch of sourness and astringency.
