Kawamichiya, a shop with over 300 years of history in Kyoto, based their Soba Boro recipe off of Soba noodles made with 100% buckwheat flour. They decided that taking their family-secret soba noodle recipe and turning it into a confection would be a great idea, and they were not wrong.
Usually, Soba Boro cookies contain a half-and-half mixture of buckwheat and wheat flours, but these particular cookies use a higher ratio of buckwheat flour, so you can enjoy the aroma and nuttiness of buckwheat. They also come in cute plum blossom and round shapes.
