The base material is a type of stainless steel called New Edelweiss that is produced by Austrian steel manufacturer BÖHLER. Their superior metal features outstanding hardness that can deal with a heavy use.
Due to the specialty heat treatment, this petty knife has less carbon, resulting in decent corrosion resistance and a feature that makes it easy to sharpen.
The petty knife is best suitable for hand peeling and other small tasks on a cutting board.
