This seasoned snack is thickly shaven, half-dried flakes of bonito. They're not paper-think and completely dry like typical katsuobushi, they're more similar to the texture cured meats like prosciutto.
The flakes are semi-dried, and then seasoned lightly with soy sauce, to give a smoky, salty, umami flavor that goes perfectly with cheese and wine.
