This suimono clear soup from Kyuemon is presented inside of a monaka wafer. A wonderful creation hard to find outside of Japan. Monaka soups contain all the ingredients you need for a delicious Japanese soup inside of a grilled mochi monaka wafer, which dissolves in hot water.
The wafer shell is hand-baked by a professional artisan using mochi cut to precise measurements to form the perfect shape. Each wafer is then carefully inspected for unevenness, chips and protrusions, and only those that have been grilled to Kyuemon's high standards will be used.
Using thinly-shaved dried bonito from Makurazaki, Kagoshima and Kombu kelp from Hokkaido, Kyuemon has carefully selected the best ingredients to make an exceptional soup.
Just add water and watch the beautiful pink and white wheat protein blossoms, and yellow yuzu peel saturate with water and float to the surface, and then enjoy your bowl of delicious soup, perfectly balancing flavor and presentation.

Take the top half off of the wafer, and put it alongside the bottom half, full of soup ingredients, into a bowl. Pour hot water over the ingredients and watch them dissolve and rehydrate into a tasty Japanese soup.
