This type of knife is classified as gyuto knife: its long blade means you can easily cut or slice large foods while its pointed tip allows you to perform cutting tasks in tight spaces.
Normally, stainless steel does not tend to get rusty but is difficult to sharpen. In contrast, this product has a blade made of UX10 stainless steel: a high purity special stainless steel produced by a Swedish steel company and with a cutting capacity as great as that of carbon steel but also with exceptionally rust-resistant properties. This is why Misono’s UX10 series is followed by professional chef's around the world.
