This is a high-class Japanese yanagiba knife (also known as sashimi knife) made of molybdenum-vanadium steel that is designed to cut sashimi or raw fish smoothly. This alloy is not only sharp but also has great rust- and abrasion-resistance, and long-lasting sharpness.
The blade and handle are integrately molded and a bolster is attached between them. This makes the washing easier thus keeps this full-metallic knife more hygienic. You can also sterilize it with hot water.
Its right-left asymmetric handle has diagonal-lines-patterned concaves on one side of its surface which enables you to hold and control the knife firmly even with wet or oily hand.
