Yamato Soy Sauce & Miso is a Japanese fermented food maker located in Kanazawa, Ishikawa Prefecture. One of their products, Yamato Miso, highlights the balance between sweetness and robustness.
Through repeated trial and error, this product is marketed after the miso paste has finished its 8-month-fermentation: Yamato believes fermenting the miso for 8 months is the best way to balance sweetness and robustness.
Unlike most conventional miso pastes, Yamato Miso is not heat-sterilized. As a result, it contains an abundance of living enzymes which bring various health benefits.
Another feature that makes this Japanese miso unique is that it does not contain sake spirit: this product is alcohol-free miso.
