This furikake from Takusei is a special blend of a few very special ingredients, leading to a very balanced and delicious seasoning for rice and other dishes.
Included in this mix is Makurazaki Bonito, known as the finest bonito (or, katsuobushi) in Japan. Makurazaki is the largest producer of bonito in Japan, and their temperate climate and the dedication their traditional processing techniques have given them a reputation for making the best bonito money can buy.
It also includes Kishu ume plum, the ume plum is grown in various areas across Japan, but the ume from Kishu (modern-day Wakayama) has been known as the best since the 1600s. The Tanabe area of Wakayama has the perfect climate for fruit orchards, and their ume cultivation is managed under very strict guidelines to ensure they they only grow the best, and most sustainable ume plums.
The key ingredient in this furikake seasoning mix, however, is the shirasu (whitebait), which are the tiny, dried fry of sardines. Shirasu is a common ingredient in Japanese cuisine, as it adds an intense boost of salty, umami flavor to any dish.
